用料  

蘑菇 Mushrooms
橄榄油 olive oil 1汤匙
蘑菇 mushrooms 160g
海盐 sea salt 1/2茶匙
黑胡椒 Black pepper
炒豆腐 Tofu Scramble
小葱,剁碎 spring onions, chopped 4根
橄榄油 olive oil 1汤匙
大蒜粉 garlic powder 1汤匙
姜黄 turmeric 1汤匙
绢豆腐,挤干水分 pack silken tofu, drained 1块
酱油 tamari 1茶匙
营养酵母 nutritional yeast 3汤匙
辣椒碎——可选 A pinch of chilli flakes - optional 一小撮
海盐和黑胡椒 Sea salt and black pepper
几滴柠檬汁 A squeeze of lemon juice 几滴
托盘烘焙 Traybake
墨西哥饼 tortillas 8张
素食香肠(按照说明切成长条并煮熟) vegetarian sausages (cut lengthways and cooked as per instructions) 4根
按照说明做3个土豆煎饼 3 hash browns cooked as per instructions 3个
烘豆 baked beans 1/2罐
樱桃番茄(去掉汁水)cherry tomatoes (juice drained) 1/2罐
纯素奶酪(可选)vegan cheese (optional) 75g
盐 salt
胡椒粉 Pepper

丰盛的早餐卷饼 BIG BREAKFAST BAKE的做法  

  1. 炒蘑菇。煎锅中倒油,加入蘑菇,用中火炒2-4分钟,直到蘑菇变熟,颜色微微发黄。用盐和胡椒粉调味。
    To make the mushrooms, add the mushrooms to a frying pan with the oil and cook on a medium heat for 2-4 minutes until the mushrooms are cooked and slightly brown. Season well with salt and pepper.

  2. 炒豆腐。在小煎锅里倒入橄榄油并加热,然后加入小葱。炒至小葱变软,颜色变为褐色。加入大蒜和姜黄。
    To make the tofu scramble, heat the olive oil in a small frying pan and add the spring onions. Fry until soft and browning. Add the garlic & turmeric.

  3. 再炒一分钟,然后加入豆腐。最后加入营养酵母、酱油、辣椒碎,以及盐和胡椒粉。挤几滴柠檬汁进去。
    Cook a further minute then add the tofu. Finally add the nutritional yeast, tamari, chili flakes, and salt and pepper to taste. Squeeze in a little lemon juice.

  4. 然后,按照说明烹制香肠和土豆饼。把7个玉米饼摆放在烤盘上。确保玉米饼之间没有空隙。
    Next, to make the tray bake, cook the sausages and hash browns as per instructions. Place 7 tortilla wraps over a baking tray. Ensure there are no gaps.

  5. 在底部铺上纯素香肠和炒豆腐。把土豆饼压碎放在上层。
    Layer the veggie sausages, tofu scramble cross the bottom. Break up the hash browns and distribute across.

  6. 然后,在上面放上蘑菇、烘豆和樱桃番茄。最后,撒上芝士和调料。
    Layer the mushrooms, baked beans and cherry tomatoes over the bake. Finally sprinkle with the cheese and season.

  7. 把烤好的玉米饼切成两半,放在中间,然后折叠其他玉米饼,直到托盘烘焙完全裹好。
    Cut the final tortilla in half and place over the middle, then fold the other tortillas until the traybake is fully wrapped.

  8. 把一张烘焙纸和另一个烤盘放在顶部来保持速度。用180 °C(356F)烘烤30分钟或等到它开始变成金黄色后取出来,切成一人份大小,配上番茄酱和浇汁!
    Put a sheet of baking paper over the top and another baking tray to help keep in pace. Bake at 180c (356F) for 30 minutes or until it starts to go golden brown. Remove, cut into person-sized portions and serve with ketchup and brown sauce!
