coffee bean cookies的做法步骤图

★ cookie
70g butter =  4.93 tbsp (1 tbsp butter = 14.2 g)
40g powdered sugar = 5 tbsp + 1 tsp (1/4 cup powdered sugar = 30 g aka 1 tbsp = 7.5)
1 egg
8g cocoa powder = 1 tbsp + 1 tsp (1 tbsp cocoa powder = 6 g)
150g flour = 1 cup + 4.94 tsp (1/4 cup = 34g)
a pinch salt
20 ml coffee = 4 tsp [I used 5 tsp, this time 7 tsp]

★ filling
50g cream cheese = 1.78 * 1/8 block
20g powdered sugar = 2.67 tbsp
25g butter = 1.76 tbsp
<<<< double = 3.56 * 1/8 block + 5.34 tbsp powdered sugar + 3.52 tbsp butter >>>>

butter 6+2/3 tbsp
egg 1

coffee bean cookies的做法  

  1. prep: bring to room temp
    1. butter for both cookie and filling
    2. cream cheese
    3. egg

  2. ----- FILLING ------
    < use hand mixer>
    1. beat up the softened cream cheese
    2. add in powdered sugar and beat
    3. add in softened butter and beat

    * could beat twice the filling if the single portion is too little to beat up well

  3. ----- COOKIES -------
    < use hand mixer>
    1. beat up softened butter and powdered sugar, till fluffy and white
    2. add room temp egg and beat to combine (could also beat up egg first and add in two parts to avoid separation). beat till the smooth cream texture
    3. add salt in between adding the halves of eggs

  4. < use spatula>
    4. sift in half of cocoa powder and flour; combine
    5. pour in coffee and combine
    6. sift in the other half of flour and cocoa powder

  5. transfer the dough to the countertop, could add some flour to avoid sticking together

    roll the dough into a long strip and divide to 48 parts. roll into ellipsoids and kinda flatten them. put a mark in the center with whatever tool into a coffee bean shape.

  6. chill in the freezer (w/ a cling wrap cover) for 15 mins to avoid the cookie expand too much during baking

  7. bake in 320 F for 18 mins

  8. assemble after the cookies are chilled

  9. chill in the freezer for 15 mins before serving

小贴士

accidentally did less than double filling
(1.4*single portion of filling for her 21 cookies)
2.5 *1/8 block cream cheese = 70.625 g (226g = 8oz)

>>>>> powdered sugar 28.25g (1/4 cup = 30g) = 3.76 tbsp = 11.3 tsp

this makes 34 beans' filling (1 batch/24 beans + 10 1tsp beans)
